Each serving packs 42g of protein as-is.<\/p>\n<p>Save time by using frozen vegetables and leftover chicken\u2014or use fresh, it\u2019s up to you! To make it more substantial and boost protein, add rice, quinoa, or pasta. You can also use my low-carb @KaizenFoodCompany pasta or rice for an extra 20g of protein per serving (though it\u2019s perfect without).<\/p>\n<p>Ingredients:<br \/>\n1 tbsp avocado oil<br \/>\n1 finely diced yellow onion<br \/>\n1.5 heaping cups finely chopped broccoli<br \/>\n1\u20132 cups chopped baby spinach<br \/>\n2 cups pre-cooked or rotisserie chicken<br \/>\n15 oz red enchilada sauce<br \/>\n3\/4 cup plain Greek yogurt<br \/>\n1\u20132 cups shredded Mexican cheese blend<br \/>\n1 tsp chili powder<br \/>\nSalt &#038; pepper to taste<br \/>\nOptional garnish: sour cream, avocado, cilantro, green onion, jalape\u00f1o<\/p>\n<p>Directions:<\/p>\n<p>1. Preheat oven to 400\u00b0F.<br \/>\n2. Heat an oven-safe skillet over medium heat with oil. Add onion &#038; broccoli. Cover and cook 3\u20134 minutes, stirring occasionally. Add a splash of water or broth if too dry.<br \/>\n3. Stir in spinach, salt, pepper, chili powder, and chicken.<br \/>\n4. Transfer mixture to a casserole dish.<br \/>\n5. In a bowl, whisk Greek yogurt with enchilada sauce. Pour over casserole. Top with cheese.<br \/>\n6. Bake 10\u201315 minutes until cheese is bubbly.<br \/>\n7.
